Birria is a hearty spicy stew from Jalisco in western Mexico. It is commonly eaten on celebration days such as Christmas or Easter. Good with all meats, but especially with lamb cooked low and slow. Also works really well with rustic vegetables and potatoes. It is also reputed to be a hangover cure !!
