The word 'Panang' is derived from the Khmer language that was adopted by the Thai people, meaning 'cross' mostly referring to leg position, like sitting cross-legged on the floor. It really should be quite a thick almost clingy dish ,not really a runny sauce like red of green Thai curries. Good with chicken of course but I do like it with thin pork strips or monkfish and king prawns.
