Panch Phoron is a key ingredient in many Bengali dishes, it is great as a rub on meat or vegetables before cooking. Also it can be mixed with a tiny bit of oil and brushed onto naan bread or potatoes. It is also used fried in a little touch of oil, and used in a dal style dish. Some prefer to roast and grind the mix first but that would not be considered authentic or essential.
