Traditionally a Thai Jungle curry (Kaeng Pa) differs from other Thai curries in that it doesn’t contain coconut milk. It is also very spicy. It comes from the heavily forested areas of Northern Thailand where there are no coconuts growing. It was often prepared with game such as Wild Boar, but now Chicken and Pork are more often used with a host of vegetables included. Our version stays true to the original, so you are going to get a highly spiced and wonderfully aromatic curry. Although we recommend using Chicken or Pork, there is no reason why this can’t be used with either seafood or Asian vegetables.
